Last Minute Accommodation near Christmas - is it available?

I'm going on a trip in November/December and I'm planning on getting accommodation last minute on those website for the most part, but I'm wondering if anyone knows whether this is still a good option closer to Christmas in the Munich - Zagreb type locations? Or should I book in advance?

1. Most hotels are empty for the holidays until New Years. Then you should book ahead.
